Smoked Superfood Pizza Comes to Los Angeles

California Gold BBQ Rubs and Cheech’s Pizza have teamed up to offer a new line of thin crust Smoked Pizzas with Superfoods. With the growing trend of people trying to eat healthier, it is only natural to bring it to pizza.

Cheech’s Pizza has developed a special process of infusing natural Hickory Smoke into several of their pizza toppings. Borrowing from the Nutritional Charts, they use foods that already go great on pizza. For example, the Smoked Chicken Pizza comes with lean Smoked Chicken Breast, Fresh Spinach, Basil, Tomatoes, Garlic and Onion. These heart-healthy Superfoods are served on a thinner crust pizza with less sauce.

A Family Business since 1993, the restaurant has recently traded up to the next Generation. Longtime owner Doug Clarey has handed the reins over to daughter Alie, who has “worked” at Cheech’s Pizza since about the age of 6. With Alie being Vegetarian, it inspired the next new creation: The Smoked Veggie Combo. The line-up of Superfoods on the pizza include Smoked Garlic, Green Pepper, Tomatoes, Mushrooms, Onion and Fresh Basil. The unique recipe shows that Hickory Smoking is not just for meat anymore. Most people who taste it can’t believe it’s meat-free.

The new pizzas come seasoned with POWER and HEROIC! from California Gold BBQ Rubs. Cheech’s is the first Los Angeles restaurant to offer customers the Superfood blends that include Garlic, Red Bell Pepper, Turmeric, Cumin, Cinnamon, Thyme, Nutmeg and more. Just the combination of Rub with natural Hickory Smoke makes the Smoked Sausage one of the most popular new toppings at the restaurant. It would be stretch to call Sausage a Superfood, but the Smoked Sausage Combo does come with healthy Fresh Tomato, Garlic, Mushroom, Green Bell Pepper and Basil.

From now though Labor Day (September 1st), there will be special opportunities for the Press and Public to try the new line of Superfood Pizzas. The first event is this coming Saturday and Sunday, August 16-17 from 11:00am to 1:00pm (each day). People can stop by for a free Slice and taste the Smoked Superfood Pizzas for themselves. Fall Recipes- Cheesy Tuna Macaroni Casserole with Eggs

Cheesy Tuna Casserole with Egg, Grilled Red Onions, Mushroom and Chives.

Too chilly for cold Tuna Salad Sandwiches? Take comfort to the next level with this warm Cheesy Tuna Casserole. It is easy to make, quick to bake and deliciously satisfying. Make a nice big Casserole- the good news is that it tastes even better the next day.

INGREDIENTS (4-6 Servings)

2 Cans Albacore Tuna

4 Cups Cooked Macaroni (2 cups uncooked)

4 Boiled Eggs

2 Cups Heavy Whipping Cream

1 Can Sliced Mushrooms

1 Large Red Onion

1 Cup Chopped Chives

1-1/2  Cups Shredded Cheddar Cheese (may substitute slices)

1-1/2 Cups Shredded Swiss Cheese (may substitute slices)

3 Tbsp. POWER by California Gold BBQ Rubs

1/2 Cup Crushed Potato Chip (we used Onion Flavored)

Butter for Casserole (May also add to Drained Macaroni)

Optional- Bunch of Fresh Thyme, Grated Parmesan

Salt and Pepper to taste.

 

COOKING INSTRUCTIONS

While boiling Macaroni to al dente, boil Eggs and Pre-heat Oven to 420. Cut Red Onions into 1 inch slices, season with #BBQRub and grill for 5 minutes per side, once cooled dice Onions (may alternately pan sear Onions before next step).  Heat Whipped Cream in large pot (big enough to add Macaroni). Add 1 Tbsp. BBQ Rub, Sliced Mushrooms, and Chopped Grilled Red Onions. We also added a tied bundle of fresh Thyme and removed before adding Cheeses.

Slowly stir in half each of the Cheddar and Swiss Cheeses until sauce is smooth and creamy. Gently fold in Cooked Drained Macaroni, stir until evenly coated. Place drained Tuna on top, season with BBQ Rub add half of Chopped Chives. Add Salt and Pepper to taste. Butter Casserole Pan, add Macaroni Mixture layering evenly with Cheddar and Swiss Cheeses, placing final layer of Cheese on top. Sprinkle with crushed Potato Chips and a little more Chives.

Bake Casserole at 420 for about 20 minutes, until crumbled Potatoes start to brown. Slice Boiled Eggs into 1/2 inch Medallions. Once done, let Casserole rest for 10 Minutes. Garnish on top with Eggs, Chives and final sprinkling of BBQ Rub (Grated Parmesan optional). Enjoy.

2. Make Sauce mixing in Whipping Cream, Mushrooms, Chopped Grilled Red Onion, Cheeses and 1 Tbsp. POWER Rub.

Add Cooked Macaroni, coat evenly with sauce. Add 2 Cans Tuna, Season with POWER Rub. Genly break it into mixture in Chunks (don’t break up too much).

Mix Macaroni and Cheeses in buttered Casserole, layer top with Cheeses, Crushed Potato Chips and Chives. Bake for 20 minutes until browned.

Plate Casserole garnished with Egg Medallions, Chives and POWER Rub. Optional sprinkle of Parmesan if available.

How to Grill Healthier and Gluten Free for National Taco Day

Grilled Steak Tacos in Butter Lettuce Cups, with Tomato, Onion, Red Pepper, Carrot and Goat Cheese.

Happy National Taco Day, October 4th. Are you trying to eat healthy, but feel like you are stuck in a hard place between a Taco Truck and a BBQ Shack? Consider this recipe the Gluten Free (GF), grain free, good for you alternative.  Though most Corn Tortillas are already GF, replacing them with Butter Lettuce is light, delicious twist.

Grilled Steak Tacos in Butter Lettuce Cups

If you don’t have a Grill available, the main ingredients can be Pan Roasted or Broiled in the Oven. Not into the Meat thing? Feel free to substitute juicy Portobello Mushrooms or your favorite Vegan Meat Substitute. These are also great with Grilled Chicken Breast.

INGREDIENTS (for 4 servings)

1 1/2 to 2 lbs.- Boneless Steak (New York, Sirloin, or Skirt Steak)
1- Large Onion (White or Yellow)
1- Head of Butter Lettuce (approx. 8 layers)
4- Roma Tomatoes
2- Red Peppers (May mix with Green or Yellow)
1 to 2- Large Carrots
1/2 Cup- Chopped Green Scallions
1 Tbsp.- POWER Rub by California Gold BBQ Rubs
1. Tbsp- Taco Seasoning
1 Tsp.- Dry Cumin
8 oz- Crumbled Goat Cheese (optional)
Salt/ Pepper
Olive Oil

COOKING DIRECTIONS:

1. Chop Peppers and Tomatoes in half, removing seeds. Cut Onion and Carrot (lengthwise) into 3/4” slices. Rinse and Dry Steak, set aside.

2. Put Veggies and Meat in separate containers or foil pouches. Lightly coat with Olive Oil. Toss with Dry Rub, Cumin- Salt and Pepper (to taste). Be sure to finish Veggies, then the Meat. Try to marinate everything for at least 15 minutes to 1 hour before cooking.

3. Grill Steak 4-6 Minutes per side, depending on thickness. Grill Veggies for same amount of time (Note- Carrots may take longer cook time to tenderize).

4. Chop Veggies and Steak into 1” pieces. Place meat, then Veggies into individual Butter Lettuce Cups. Sprinkle a little extra rub on top, along with Chopped Green Scallions and Crumbled Goat Cheese (optional).

These Tacos are great for a party first course or appetizer. As a main dish add more Meat or Grilled Avocados. It can also be served with Rice and/or Beans on the side. Go for the grain with Tortilla Chips or add colorful Veggie Chips (as a GF alternative). Of course, sprinkle the Chips with more delicious BBQ Rub and Enjoy!
